I love Spelt flour it’s so easy to use. When I started healthy baking 28 years ago I converted all my recipes to whole grain first. Spelt is a flour that is whole grain (it is NOT gluten free), non GMO, bakes really well and is easier to digest than normal bleached flour, plus it has a nuttier taste. It adds a depth of flavor and more nutrients than white flour.
My favorite brand is Bobs Red Mill (or if you have a local miller definitely get an organic spelt flour).
