It is definitely an awesome investment if you are an experienced pastry chef and work in research and development. It has a probe thermometer to keep the temperature stable. Use an induction friendly pot only. I use it for making caramel, ganache, yogurt, maple sugar and anything that needs a fixed temperature and controlled cooking. I love the probe thermometer and the settings that notify me when the temperature is reached.
